Looking for a satisfying and healthy treat with some morning get up and go protein? These delicious zesty muffins calm cravings and fuel energy with healthy protein, MCTs and tasty citrus morning berry flavors.

Ingredients:

  • ½ cup (4 oz.) almond meal
  • ½ cup of any vanilla or plain organic protein powder
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • Pinch of REAL or Himalayan salt
  • 5 organic eggs or your egg substitute
  • ¼ cup organic maple syrup or 1/4 teaspoon of stevia
  • 4 tbsp. organic coconut oil
  • 2 tbsp. organic lemon juice from real lemons- about 2 medium/large lemons
  • ½ tsp. almond extract
  • 1 can of organic white beans (cannellini or great northern)
  • 1 cup frozen organic mixed berries
  • ¼ cup organic unsweetened fine shredded coconut

Directions: 

  1. Preheat the oven to 350 F.
  2. In a bowl, mix all dry ingredients together (almond meal, protein powder baking powder, baking soda, and salt).
  3. In a separate larger bowl, beat the 5 eggs with a whisk, then add wet ingredients (maple syrup, (or stevia powder), coconut oil, lemon juice, zest, and almond extract).
  4. Add dry ingredients into the wet, and whisk until combined.
  5. Then, drain the beans and add them to the mixture.
  6. Pour the entire mixture into a blender or food processor and blend until smooth.
  7. Spray a muffin tin with organic oil or line it with paper muffin cups.
  8. Divide the batter evenly into a muffin tin.
  9. Top each muffin with 4 or 5 organic berries and shredded coconut.
  10. Bake at 350 F for approximately 25-30 minutes, or until a toothpick or cake tester is inserted and comes out clean.
  11. Eat warm with melted coconut oil!
