There are two things that are of utmost importance in the month of January, warmth and hey it is the beginning of a new start! What does keeping warm and a new start means to me? A nourishing, warm, delicious detoxifying soup for the soul and the body!

Let me share it with you here.

3 cups of organic raw sauerkraut
2 tablespoons of cold-pressed extra virgin olive oil
3 fresh garlic cloves (large in size and finely chopped up)
1/4 teaspoon real salt or sea salt
1/4 teaspoon fresh ground pepper
2 large carrots cut up
2 cups of celery
3/4 fresh parsley chopped fine
6 cups of your favorite organic veggie broth
1 organic veggie/herb soup cube (optional but tasty!)
1 bay leaf

Rinse the kraut and set it aside.
Heat the oil in a large pot at medium heat, then add the chopped onion and cook until soft.

Add chopped garlic and salt and cook for 1 minute. Add carrots, celery, parsley, and sauerkraut. Stir to combine and add the veggie broth, the veggie/herb soup cube, along with the bay leaf.

Bring to a boil, stir, then reduce heat and simmer for 45 minutes.
